Oysters are ecosystem engineers. An adult oyster filters 200 liters of water a day, and removes excess nutrients, such as nitrogen which reduces the chance of algae blooms and red tides, as well as reintroducing oxygen into the water vital for fish and other marine life. Oyster reefs reduce coastal erosion, protect saltmarsh, and act as carbon sumps. The responsible farming of oysters actually promotes the reinvigoration of our oceans. So you can eat them with a healthy conscience.

About
After years running the floors, doors, and bars of some of New York and Los Angeles’ most famous restaurants, from The Palm, Le Colonial, to the bar at Vanity Fair’s Oscar Party, Tom used his experience to open Holberg no19.
A modern day Harry’s bar just off of Nyhavn in Copenhagen, where an international clientele including IT start ups, businessmen, and tourists mingled with local Danish artists, authors, and actors over personally curated tapas, wine, coffee, and beer. It’s been featured in the Guardian, Politiken, Alt for Damerne, Rick Steves guide to Europe and Scandinavia, as well as commercials, films, and TV series. In Danish author, Niels Barfoed’s book “Begyndelser Til Enden - en Caféfortælling”, he calls it “Tom”, which is maybe why most people know it just as “Tom’s”.
Most recently, Tom has used his expertise at Matrikel 1, SoHo House, Marchal at D’Angleterre, and helped relaunch the classic Frederiksberg restaurant, Sans Souci.
Who are they?
According to SubGenius dogma, "Bob" was a salesman who, in 1953, saw a vision of the god JHVH-1 on a television set he had built. The vision inspired him to write or dictate the "PreScriptures" (as described in the Book of the SubGenius) and founded the Church. The theology holds that "Bob" is the greatest salesman who ever lived, and has cheated death a number of times. He is also revered for his great follies and believed to be a savior of "Slack". He was assassinated in San Franciscoin 1984, though the Church claims that he has come back from the dead several times since then.
